Cinnamon Banana Bread
With a rich flavour and fluffy texture, this is the classic recipe that is just so easy (with a small tweak that we like to add)! That dash of cinnamon is guaranteed to infuse your banana bread with a lovely warm flavour. It’s a great way to use up those overripe bananas in a simple one bowl recipe. This is my go to baking recipe - I make it almost every Sunday.
Ingredients
Three very ripe bananas
200g plain flour
One egg
75g melted butter (plus additional for lining the tin)
150g brown sugar
One teaspoon of baking soda (bicarbonate of soda)
One or two teaspoons of cinnamon
One teaspoon of vanilla extract
Method
Set the oven to 180°C fan.
Mash the bananas and mix in a bowl with flour, egg, vanilla, butter, sugar, baking soda and cinnamon.
Line the cake baking tin with a little bit of butter and pour in the mixture (I use a 26cm x 10cm tin).
Put in the oven for 55 minutes. Test with a knife to make sure it’s firm.
Et voila! It’s ready to serve!
