Apple Crumble
Apple crumble always conjures up visions of warmth, cosy afternoons and evenings at home, and spending time with loved ones. This golden dessert is superb to rustle up at the last minute to indulge any sweet cravings. The crisp, crumbly topping is a delightful contrast to the soft, juicy apples. With its homely flavour and buttery crumble, it’s definitely classic comfort food. This is one of my favourite recipes which you can make all year round (I make it every year for my Thanksgiving dinners). And it takes less than 20 minutes to make (cooking time not included!)
4 medium cooking apples
2 tablespoons golden caster sugar (for the filling)
180g plain flour (you can also use almond flour for a richer texture)
110g golden caster sugar (for the crumble)
110g butter
(Plus a pinch of cinnamon if you want added flavour)
Firstly heat the oven to 175 degrees on a fan setting. Peel, core and thinly slice the apples, then place in a baking dish (round or oval shape) and scatter the 2 tbsp of golden caster sugar over (plus a dash of cinnamon if you want!) and press down the filling with a spoon to form an even layer in the baking dish.
Put 175g flour and 110g caster sugar in a mixing bowl with a dash of salt (plus I put a tiny bit of cinnamon to give that extra warm flavour). Cut the 110g butter into small pieces (make sure it’s chilled when you do this), add it to the mixing bowl and mix all together until it starts to look like breadcrumbs. Make sure there aren’t any large pieces and that it’s all the same size and consistency.
Spread the topping over the apples in the baking dish - and make sure that it’s an even layer completely covering all the apple filling. Place it in the oven for around 35 minutes.
Serve hot with a drizzle of double cream or served with delicious vanilla ice cream.
