For a classic dessert with a delicate twist, try making Earl Grey poached pears! This sophisticated dish combines the sweetness of ripe pears with the fragrant notes of Earl Grey tea, resulting in a beautifully balanced treat that is sure to impress your guests. Fill the sauce pan with water then add the tea bags and the sugar. Bring to a boil; then remove from the heat and let steep for 3 minutes.
Remove the tea bags.
Place the pan back on the stove and bring to a slow simmer over medium heat. Add the pears, vanilla pod and then a quarter of the orange peel, then cover the pot with a lid. Leave the pears to simmer slowly for 15–20 mins (or until just tender).
Remove the pears with a slotted spoon and place onto a plate.
If you’re serving straight away, we’d recommend serving the pears warm. Bring the liquid back to the boil and simmer until thickened and reduced by 50%, then remove the orange peel. Add the pears back to the pan of liquid and gently warm.
To serve, garnish with the rest of the orange peel, a scoop of either vanilla ice-cream or greek yoghurt (and a dash of cinnamon!).
This makes a great leftover recipe if you want them with your granola and yoghurt (for breakfast, just leave to cool then keep them in the fridge).
