Elderflower Cooler Recipe

Get into the summer vibe with this mocktail featuring elderflower, lime, mint, and cucumber. Cool and refreshing, it's superb for those hot summer days. The perfect thirst quencher for a summer drinks soirée  - and it's alcohol-free. Ideal for when you need something sans alcohol, a perfect summer mocktail recipe that’s absolutely delicious. This recipe will certainly not disappoint and it just takes 10 minutes to throw together!

A new favourite warm-weather refreshment for entertaining. If you’re staying with a non-alcoholic beverage this definitely steps up your mocktail game. I also love being able to use fresh mint from my home, so whether you’re in a city and growing mint on a window ledge or have it growing in a kitchen garden it’s always lovely to use something fresh from your home

 

Ingredients (Enough for 3 to 4 glasses)

  • 200ml elderflower cordial

  • 1 cucumber

  • 500ml tonic water

  • 3 limes juiced

  • Handful of fresh mint leaves

  • Ice

Instructions:

Peel the cucumber into long strips and save the skins for using as roll garnishes to display with the finished drink.

Put the rest of the cucumber into a food processor plus the mint leaves, sieve into the mint and cucumber mix into a jug or pitcher. Add the elderflower cordial, tonic water and lime juice to the jug. Add ice cubes and then garnish each glass with mint leaves and the cucumber roll garnish.

Serve with a slice of lime for an elegant touch and they’re ready to enjoy!
