Lemon Madeleines Recipe

Our lemon Madeleine recipe offers a delightful twist on the classic French pastry, perfectly suited for the vibrant flavours of spring. Infused with the refreshing essence of zesty lemons, these light and fluffy Madeleines are elevated by a hint of vanilla, creating a harmonious balance that is both invigorating and comforting. Ingredients
For the Madeleines:
2 Eggs
1 Lemon (Zest for the Madeleines and the juice for the lemon glaze)
90g Brown Sugar
100g Melted Butter
100g Flour
1 tsp Baking Powder
1 tsp Vanilla Extract
A Dash of Salt
This makes 24 Madeleines (2 baking trays worth).
For the Lemon Glaze:
3 Tablespoons of Lemon Juice
100g to 125g of icing sugar (depends on how thick you want the icing to be)
Instructions
For the Madeleines:
In a large bowl, add sugar, eggs, and lemon zest. Using a whisk, mix them until the sugar has dissolved.
Sift in the flour and baking powder and whisk.
Add in melted butter and whisk until well combined.
Cover the bowl with cling film and chill the dough for at least 1 hour (allowing the batter to rest in the fridge ultimately helps the Madeleines rise up taller in the oven.)
Preheat the oven to 180°C on Fan.
When the hour has passed, grease a non-stick Madeleine baking tray with butter and a tiny dusting of flour.
Take the batter out of the fridge.
To loosen the batter and remove any air bubbles, simply stir with a spoon.
Pour or spoon the batter into each Madeleine mould just until it’s 80% to 90% full, as the pastries will rise.
Place the Madeleine pan into the preheated oven.
Bake for 10 minutes.
Remove Madeleines from the pan immediately.
Cool them completely before glazing them.
For the Lemon Glaze:
Sift the icing sugar into a bowl (if you don’t use a sieve the lemon glaze will be lumpy), add the lemon juice.
Whisk until it’s a thick white paste.
Use a pastry brush on the shell side of the Madeleines with the lemon glaze, add a tiny amount of lemon zest just to garnish each Madeleine.
Leave them for a few minutes just to set.
