Grilled Peach Salad

Now that the weather’s finally getting warmer and peaches have come into season, we have a recipe we love and want to share with you: the perfect peach salad. This versatile fruit can be used in just about anything – everything from desserts, salads, drinks, and more. Peaches are especially refreshing in a summer salad, maybe even more than heirloom tomatoes. They’re a real staple in the kitchen this season. And luckily, there are so many different ways you can cook with them, both sweet and savoury, from peach pie, peach ice-cream, peach iced tea, or a peach cobbler, to the delicious peach salad featured here. If you're looking to keep cool during the summer months, this delightful dish is ideal. It’s bursting with zest and sweetness, with a perfect balance of flavours - great as a side or even as a flavoursome main for a light lunch. Our recipe combines a scrumptious sweet and salty contrast, with juicy peaches accompanied by a creamy burrata, serrano ham and fresh rocket, to make a refreshing summer salad, perfect for alfresco dining.

Ingredients

Two ripe peaches

Three handfuls rocket

Four slices serrano ham

One burrata

Two tbsp of toasted pine nuts

You can either cook the peaches under the grill in the oven or heat a griddle pan over a high heat. Cut the peaches in half and remove the stone. Glaze the peaches with oil then cook them until charred and caramelised on the surface. Place the pine nuts in a nonstick pan with a tiny amount of olive oil over medium heat. Use a wooden spoon to consistently stir the pine nuts until they get nice and golden after around three minutes.

Scatter the rocket and ham on the platter, add the peaches and place the burrata on top. Scatter over the pine nuts and the dressing. For the dressing I like to keep it quite simple: just mix three tablespoons olive oil, two tablespoons white balsamic vinegar, one teaspoon of acacia honey and serve!
